SWEET POTATO & CHESTNUT MUSHROOMS


No need for any detailed information on this one because it's basically the same as the Bacon & Shiitake Soup shown further down the page. The only difference is that I substituted the regular potatoes for Sweet Potatoes and the Shiitake Mushrooms for Chestnut Mushrooms.

The orange colour of the sweet potatoes and the dark nutty brown of the chestnuts make this a lovely green soup which tastes gorgeous! After blending the soup, I added the cooked bacon and a portion of mushrooms which I'd reserved, then added those to the blender and did a "pulsed" blend to make sure that there was plenty of texture, but no big lumps.

Don't forget the salt and pepper!
