ROASTED TOMATO

This recipe was passed to me by a colleague at work. It's extremely simple to make and prep takes no time at all. Note that this only produces enough for two or three servings.


Ingredients :

  • 1 Kg Organic Tomatoes
  • 1 Red Onion
  • 1 Red Pepper
  • 2 Cloves of Garlic
  • Balsamic Vinegar
  • Olive Oil
  • Caster Sugar
Method :

Cut the tomatoes in half and lay them out on a roasting tray, cut side up as shown in the photo on the left. Then cut the pepper and the onion and place those on the tray too. Now put the two garlics (unpeeled) onto the tray and sprinkle 2 tablespoons of olive oil and 2 tablespoons of balsamic vinegar over the ingredient, followed by 2 teaspoons of caster sugar. 

Place in a pre-heated oven for an hour (less if fan assisted) at Gas Mark4/180C. When cooked, peel the garlic and put everything in a blender and add 200-300ml of vegetable stock. The amount of stock you decide to add will determine the thickness of the soup. Serve piping hot with a sprinkle of basil and a bread roll.

UPDATE : The sugar could be substitued for a little double-cream.
